Soup with dumplings in Persian
For 5-6 servings:
Flour - 150 g;
ground cinnamon-1/4 tsp .;
dried mint-1 tsp;
parsley finely chopped;
vinegar about -2 tbsp. l .;
very lean young lamb or beef;

To make the dough, sift the flour and salt through a sieve set up in a bowl. Make a well in the center, pour about 80 ml of water in small portions and mix well with a fork or hands. Spread the dough on a working surface lightly floured, and knead it thoroughly until the mass is homogeneous. Put the dough in a bowl again, cover with a towel and leave for 10 minutes.
To make the filling, put in the mince from a bowl of lamb or beef, add grated onion, salt and pepper and sprinkle with cinnamon.Mix everything well.
Divide the dough into 3 parts, with which it will be convenient for you to work. On the cutting board, floured with flour, roll out the first part of the dough so that you can turn the circle around 30-35 cm in diameter. Cut 4 squares of 4 cm out of it. In the center of each square, place half a teaspoon of meat filling and cover with another square of dough. Use your fingers or fork to mold the dough around the edges of each dumpling. Make dumplings from the rest of the dough.
Take the remaining water after cooking the dough, lightly salt it and bring to a boil. Put the dumplings in it and cook until then. until they reach full readiness. Mix cinnamon with mint. Before removing the pan from the stove, pour the prepared mixture into it, and also add the parsley greens. Add vinegar to the soup. Some people like to fill this soup with Yogurt.
