Imagine, and in fact there was a time when people never tried kefir and did not know what kind of thing it was, but only heard that they invented somewhere a drink that saves from many ailments. And it was, by the way, not so long ago, in the XIX century.
Now every person is absolutely accustomed to such a product, most of us do not represent our life without kefir. But, by the way, in the same China, even now the locals do not eat it, and it is extremely difficult to buy it in an ordinary supermarket.
And it’s in vain, because you can talk for hours about the beneficial properties of this product: not only does it have a positive effect on the growth and strength of hair, healthy skin and nails, it also calms the nervous system, has a positive effect on the cardiovascular system, and is also peculiar "Elixir of youth" for the fair sex.
And this is only the minimum that kefir can boast of. Another indisputable positive feature of such a dairy product is that it is able to play a wonderful duet with flour, after which our stomachs will rejoice in soft, tasty and airy desserts.

In addition, the whole process of making such a yummy meal does not take much time, and it does not require special culinary skills, everything is primitive and simple.
The difference between baking on kefir and the usual one is very bright, because the dough is quite dense and elastic in its consistency, and after baking the cake itself resembles a biscuit, and in taste and appearance.
And note, it is rather difficult to make a sponge cake for an inexperienced hostess, but kefir dough - just spit!
In such a dessert, in the light, you can add a variety of fillers, for example, from fresh berries or fruits - strawberries, raspberries, currants, peaches, plums or apricots, also suitable and frozen or canned them, depending on the time of year, of course.
By the way, the most useful kefir is cooked on its own, for this, however, it is necessary to purchase a special leaven, which, by its content of kefir fungi, causes fermented milk fermentation.
Such a kefir will definitely be able to boast of its incredible range of useful substances and vitamins, and it is probably a pity to add one to baking! Well, okay, let's get down to business.
Recipes of kefir dishes
Easy and quick recipe, in accordance with which you can cook as independent pyshechki, sprinkled them with powdered sugar, and add any stuffing: meat, sweet or vegetable. To prepare the dough, you will need:
- 40 g of sugar;
- 500 g of yogurt;
- 2 eggs;
- 2 cups flour (small);
- vegetable oil, soda.
Mix the prepared sugar and kefir, then add the eggs, a couple of tablespoons of vegetable oil and mix everything thoroughly. Now add a teaspoon of slaked soda and grab the flour.
The main thing to remember is that the dough should be quite thick, the flour is different, just like kefir, so stir slowly, so as not to overdo it.
Knead the whole mixture thoroughly, then let the dough stand for a bit so that the flour is swollen. And what is most surprising, very soft and airy pyshechki are usually obtained from such tough dough. We heat up the oven, grease the baking sheet with vegetable oil,after which we form and lay out our pyshechki. If you are cooking with a filling, then it's time to place it inside our future buns. We bake at a temperature of 180 ° for about 20 minutes.

- 200 g butter;
- 50 g of cocoa powder;
- 0.5 cups flour;

To begin with, we will enrich flour and cocoa powder with oxygen, for this we sift them through a sieve, and then sift 2 teaspoons of soda and a pinch of salt. Then we set the oven to warm up to 180 °.
At this time, in a separate large bowl, beat butter and sugar with a mixer (remove the butter from the refrigerator before it softens). Beat everything up to a bright and fluffy consistency, after which we hammer, one by one, the eggs.
Now gradually add the flour mixture and pour the kefir, everything is kneaded until all the dry ingredients are completely wet. Then pour a glass of boiling water and beat the mixture for another minute.
We take a baking sheet, grease it with oil and pour the whipped mass into it, after which we bake the cake for 30-40 minutes until it is fullreadiness. The readiness is checked with a toothpick; if it is dry when it is inserted into the center of the cake, then the cake is ready. Let it cool and serve.
It often happens that kefir in the refrigerator is stagnant and no one will drink it, since its shelf life has long been out. What to do, it's a pity to throw out. Do not be sad, you can cook from an overdue, but most importantly, not completely missing kefir, if the smell and color are quite normal, then go ahead, it fits perfectly for cooking. You will need (glass - 200 ml):
- 1 cup of kefir;
- 1 glass of semolina;
- 1 cup of sugar;
- 1 cup flour;
- 1-2 eggs;
Sift the flour and semolina, after which the flour is set aside, and thoroughly mix the kefir with the semolina, hammer in the eggs and again mix everything thoroughly. Now let the dough stand for about 30-40 minutes, then add the soda and flour, stir. The dough, by the way, should turn out not very thick. Almost everything is ready - we heat up the oven, grease the baking sheet, sprinkle with semolina and send to bake at 180-190 ° for about 40 minutes.
